Cucumber Lime Popsicles

A refreshingly unique and delicious popsicle made with real cucumbers, a little sugar and fresh lime juice. Blend the ingredients together and freeze for a quick and easy summer treat!

After being inspired by Smitten Kitchen’s Cucumber Lemonade recipe many years ago, I was determined to make a popsicle version. These popsicles surprise even those who are averse to cucumbers or any kind of “different” popsicle flavor. The sugar and lime juice really transform an otherwise neutral vegetable into something very enjoyable and refreshing. And these cucumber lime popsicles couldn’t be easier to make! All the ingredients are simply blended, chilled and then frozen.

HOW THIS RECIPE COMES TOGETHER

  • 1. Prep the veg: Whole cucumbers are washed, peeled, trimmed and chopped before being blended. Any kind of cucumber can be used for this recipe. Fresh lime juice is squeezed.
  • 2. Blend: The chopped cucumbers, sugar and fresh lime juice are blended until smooth.
  • 3. Chill: Just like when making ice cream, this mixture benefits from being chilled first. I usually let the mix chill overnight in the refrigerator, but 4 hours will probably be sufficient.
  • 4. Freeze: Stir the mixture well, pour the mixture into popsicle molds and freeze for at least 8 hours.
  • 5. Unmold and enjoy! Remove the popsicles by briefly dipping the cavities into hot water. Enjoy them right away or wrap and store them in the freezer for later.

TIPS, TRICKS & A FEW NOTES

  • – In the recipe I recommend peeling the cucumber. I have left the peel on and proceeded to make the popsicle mixture in the past. I was on the fence about the end product. The cucumber flavor is more forward and there is a lot more texture from the skin. It will also make the popsicle much darker green in color. Ultimately I think you’ll be more satisfied if you take few minutes to peel the cucumbers first.
  • – I can be annoying to chill a mixture before freezing it. You may be thinking, I’m going to freeze it anyway so what’s the difference? Just like when making ice cream, when a base is cold before it freezes, the ice crystals that form will be much smaller. Therefore, the popsicles will be softer and less icy in texture. I highly recommend chilling the popsicle mixture for a minimum of 4 hours before freezing it in molds.
  • – Once the popsicle mixture is chilled, I recommend stirring it well before pouring the mixture into molds. This will ensure the mixture freezes more evenly and will encourage the solids to separate from the liquids less.
  • – I call for lime juice in this recipe because I think it really compliments the cucumber well. Fresh lemon juice can absolutely be substituted in place of lime juice.

Servings 10 popsicles

Equipment

  • 1 standing or stick blender
  • 1 vegetable peeler
  • 1 reamer optional
  • 1 sharp kitchen knife
  • 1 10 cavity popsicle mold
  • 10 popsicle sticks

Ingredients

  • 690-700 grams peeled cucumber (from 2 or 3 large whole cucumbers)
  • 250 grams granulated sugar (about 1 1/4 cups)
  • 90 grams fresh lime juice (about 6 tbsp)

Instructions

  • Peel the cucumbers, slice off the ends and discard the scraps. Chop the peeled cucumber into chunks and add to a blender or bowl along with the sugar and fresh lime juice.
  • Blend the mixture until smooth. I recommend chilling the mixture in the refrigerator overnight or for at least a few hours before freezing. This will improve the texture of the popsicles.
  • When the mixture is chilled and ready to be frozen, stir it well first and then divide the mixture evenly among the 10 popsicle cavities. Place the top onto the mold and insert the popsicle sticks. Freeze them overnight or 8-10 hours for the best results.
  • When ready to remove the popsicles, briefly dip the mold into very warm water and then remove the popsicles. Enjoy immediately or keep them in an airtight container in the freezer.
