Fruitcake bars are a delicious alternative to traditional dense fruitcake that can be made right in a 9 x 13 cake pan. Dried fruit and nuts can be soaked in bourbon for up to 24 hours and then folded into the cake batter. After baking, the cake is soaked in bourbon and topped with icing.
Fruitcake tends to be a beloved or loathed baked good. I did not grow up eating it and had no interest in consuming it until well into my twenties. While working for a bakery, my boss asked me to develop a recipe for fruitcake and I somehow came up with these. The cake itself, while dense with fruit, is still tender and buttery. The use of dried fruit instead of candied fruit gives the cake a much more complex flavor and texture. I actually prefer to use a good bourbon for these fruitcake bars, but feel free to go the more traditional route with brandy or even a dark rum.

WHY YOU WILL LOVE THESE FRUITCAKE BARS
- 1. Make them in one day or several days. In the recipe notes below, I have options for making the fruitcake bars in a single day or spacing it out over several days.
- 2. Traditional but unique! These fruitcake bars always intrigue and end up surprising people. When I sold them at farmers markets I found they please both traditionalists and non-traditionalists. The bars are classic enough to satisfy those who grew up eating fruitcake and delicious enough to please those who didn’t.
- 3. Perfect for the holidays! Fruitcake bars make delicious gifts and really dress up cookie traya for holiday gatherings.
- 4. Make bars or loaves. Instead of baking bars in a 9 x 13 cake pan, you can divide the batter for this recipe into two 9 x 5 loaf pans instead. An iced loaf of fruitcake wrapped beautifully makes an excellent Christmas gift.
- 5. Uses mainly dried fruit and nuts. Fruitcake recipes often call for a load of candied fruit and nuts. Dried fruit is a little less expensive and you can easily find uses for the remaining fruit in other baked goods. The crystallized ginger called for in this recipe can also be used in my Giant Ginger Molasses Cookies. Extra pecans can find their way into Pecan Bars or a Pecan Pie. Extra dried fruit and nuts can be mixed into a batch of Honey Almond Granola.

A QUICK OVERVIEW OF HOW TO MAKE FRUITCAKE BARS
- 1. Soak the nut mixture. Various dried fruits and toasted pecan are chopped to a similar size and then soaked in bourbon, brandy or dark rum. The fruit can be soaked for 24 hours before making the bars or microwaved briefly to make the recipe all in one day.
- 2. Make the bar batter. Room temperature butter and sugars are creamed. Eggs, extracts, citrus zests and additional alcohol are added. A mixture of dry ingredients including ground spices is added. Finally the soaked fruit and nut mixture is folded in.
- 3. Bake the bars. The bar batter is baked in a greased 9 x 13 cake pan and then cooled. Alternatively, you can bake this batter in two 9 x 5 loaf pans.
- 4. Soak the bars. Once cooled slightly, the bars are soaked multiple times in your alcohol of choice.
- 5. Ice the bars. The bars are then topped with icing.

Fruitcake Bars
Equipment

- 1/2 cup (4 fluid ounces) bourbon, brandy or dark rum
- 1/2 cup (4 fluid ounces) fresh orange juice
- 1/2 cup (57 grams) dried cranberries
- 1/2 cup (75 grams) golden raisins
- 1/2 cup (57 grams) dried currants
- 1/2 cup (64 grams) dried apricots diced to the size of the other fruits
- 1/2 cup (71 grams) dried cherries diced to the size of the other fruits
- 1/2 cup (73 grams) crystalized ginger diced to the size of the other fruits
- 1 cup (105 grams) toasted pecans chopped to the size of the fruits
For the cake
- 1 cup (227 grams) salted butter room temperature
- 1/2 cup (100 grams) granulated sugar
- 1/2 cup (105 grams) brown sugar
- 4 extra large whole eggs room temperature
- 1 tsp almond extract
- 1 tsp vanilla extract
- zest of 1 orange
- 2 cups (250 grams) all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp ground ginger
- 1/2 tsp ground allspice
- 1/8 tsp ground cloves
For the soak
- 1/2 cup (4 fluid ounces) bourbon, brandy or dark rum
For the icing
- 3 cups (339 grams) powdered sugar, sifted
- 1/4 cup (2 fluid ounces) whole milk
- 1/2 tsp almond extract
- pinch of salt
Instructions
For the fruit
- Combine all of the chopped fruit and nuts in a large bowl. Pour the alcohol and fresh orange juice over the fruit and nut mixture. Toss to coat everything in the liquids. Cover the bowl and let the fruit macerate for 24 hours.
- If you prefer to make the bars in one day, microwave the bowl for about a minute. Toss everything around again to ensure the liquid is mostly absorbed and then proceed with the recipe.
For the cake
- Preheat a conventional oven to 325 degrees F. Make sure an oven rack is in the center. Line one 9 x 13 pan or two 9 x 5 loaf pans with enough parchment to hang over the sides a bit. Grease the pans and paper.
- Sift or whisk the flour, baking powder, baking soda and ground spices in a bowl and set aside.
- Place the butter and sugars in the bowl of a stand mixer fitted with a paddle attachment. Cream the butter and sugars for about 3 minutes in a stand mixer or with a hand mixer.
- Scrape the bowl and paddle. Turn the mixer back on medium low speed and add the eggs one at a time. Let each egg incorporate into the butter/sugar mix before adding the next. Add the extracts and orange zest and beat for 30 seconds to incorporate. Scrape the bowl as necessary.
- With the mixer on low, slowly add the dry ingredients until just mixed. Add the fruit mixture and beat briefly to combine.
- Scrape the batter into the prepared pan and bake on the center rack in the oven for 45 – 75 minutes. Begin checking at the 45 minute mark. Remove the cake from the oven when a cake tester poked into the center comes out mostly clean.
- Let the cake cool on a wire rack for about 20-30 minutes before adding the soaking liquid.
For the soak
- Using a pastry brush, gently brush the alcohol over the top of the cake. Do this a little at a time until the entire 1/2 cup is used. Let the cake cool completely before icing it.
For the icing
- In a bowl, whisk the sifted powdered sugar, almond extract, milk and salt vigorously until a glossy, thick icing forms. Pour the icing evenly over the cooled cake. Use an offset spatula to spread the icing evenly. Let the icing set completely for at least 1 hour before cutting into bars.
- Bars can be kept in an airtight container for up to one week.

Hi. The Fruitcake bars look delicious.
Have ever made them without soaking the fruit in bourbon or rum, or another liquid?
Thanks
I have never tried not soaking the fruit since all fruitcake recipes usually call for a soak. Without an alcohol soak, the nuts would remain crunchier and the dried fruit may absorb more moisture from the cake. This could lead to a drier cake overall. In the recipe I have an option for a “quick soak” that involves microwaving the fruit and nut mixture to speed up the soaking process. Thanks, Patricia!
